Vegetable stock turns out to be a versatile ingredient if you wish to prepare any yummy starters or soups. The recipe even gets easier with the use of microwave.
Ingredients:
- Leek – 1 no.
- Onion with skin – 1 no.
- Carrots – 3 nos.
- Tomatoes – 2 nos.
- Garlic clove – 1 no.
- Mushrooms (dissected) – 6 nos.
- Celery sticks – 4 nos.
- Parsley Sprig – 1 no.
- Bay leaf – 1 no.
- Peppercorn – 6 nos.
- Tomato puree – 100 ml.
- Water – 750 – 50 ml.
Preparataion:
- Dissect the leek and wash it properly.
- Cut onion, tomatoes, carrots, garlic into quarters.
- Take a deep microwave proof bowl and add all the ingredients into it.
- Cover the lid and cook for 20 mins on high power with occasional stirring.
- Take the bowl out of the microwave and let it settle for a few minutes.
- Use a strainer to extract the stock and discard the vegetables.
